What Does Freeze-Dried Mean?

Freeze-drying is a special process where the product is frozen and then placed in a vacuum chamber. The water content skips the liquid stage and goes straight from ice to vapour, preserving the flavour while delivering a dramatically different, crisp texture.

Freeze-dried products can also be stored for extended periods—up to 25 years in ideal conditions.
